A few nights ago in chat, someone asked me to PM a recipe. I said I would. Now comes the "brain fog soup" part. I can't remember who asked, and I can't remember what recipe they wanted.
If anybody remembers asking me for a recipe, please post here and tell me which one and I'll put up the recipe.
My best hope is that whoever asked me has also forgotten and embarrassment is absent all the way around  .

Was it me Sunny rofl
If so I have no idea which recipe but if you think of a good one I'm all ears :D

Tortilla Soup
Two Quarts Chicken Broth (I use canned)
6 oz tomato paste
2 medium onions
three garlic cloves (or 1 heaping spoonful of pre-chopped garlic from a jar)
two or three cooked chicken breasts
8 corn tortillas (or just buy a bag of tortilla chips or strips)
ground cumin
two dried pepper pods -- seeds removed
Slice onion and saute in a tiny bit of oil. While it cooks, chop garlic. Throw garlic in with onions and cook until tender. Add the broth and tomato paste. Bring to a boil. Add crumbled red pepper pods (add more if you like a lot of heat, less or none if you don't want heat) and about 1/2 teaspoon of ground cumin. Let it boil for a bit, stirring to help tomato paste dissolve. Taste. Adjust for taste. Once spices are like you want, put in the chicken.
If you are using fresh corn tortillas, cut them into thin strips and fry in very hot oil until crispy.
Serve soup with: tortilla strips (or chips), lime quarters, chopped avocado, fresh cilantro, black olives, chopped green onions, sour cream, shredded cheese......anything else you can think of.
This goes together in about 20 minutes. Tastes like it took all day. You can get everybody to pitch in with chopping the "extras". Let everybody make their own bowl.
This tastes wonderful if you use white fish instead of chicken. If you do use fish, put the uncooked fish into the boiling broth/tomato paste and allow it to fully cook before tasting. My family really loves this made with fish -- about the only way I get fish into them all.
Enjoy!
