O.K. They're actually called Hassleback Potatoes ( after the hotel that came up with them.)...but at our house they're 'Hasslehoffs' 'cuz I'm just wierd. :lol
Start by peeling as many potatoes as you want. (Or better yet, get hubby to peel as many potatoes as you want.)
Slice the potatoes crossways (Like your cutting them into coins) But DO NOT cut all the way through. They work better if still in one piece. Place the potatoes in a pan.
Pour a cup (more or less) of chicken broth over potatoes, followed by melted butter to your taste.
Pop into oven set at 350 for about an hour. Remove from oven, spoon remaining liquid, if any, over potatoes. Or add more butter if desired. Sprinkle potatoes with bread crumbs and parm. cheese. Put back into oven for another 10 -15 minutes or until bread crumbs brown and cheese melts.
