PASTA SALAD WITH SMOKED MOZZARELLA
Creamy Parmesan Dressing
1 egg
? cup olive oil
? cup corn oil
1/3 cup red wine vinegar
? tsp sale
1 ? tsp pepper
1 ? tsp minced garlic
? cup parmesan (use good grated parmesan)
1/8 tsp cloves
1/8 tsp Tobasco
Whisk egg, gradually add oils until emulsified, then add rest of ingredients
Salad
1 pound uncooked penne
1 tbs olive oil
1 10 ounce bag fresh spinach
? pound prosciutto, thinly sliced and chopped
2 tsps vegetable oil
1 cup roasted red peppers, chopped (I buy a 10 or 12 ounce jar)
8 ounces smoked mozzarella, cut into ? inch cubes
Cook penne until al dente. Rinse under cold water and drain. Toss with olive oil. Wash spinach, put in skillet and heat while stirring until wilted (about a minute or two). Rinse under cold water and squeeze dry and coarsely chop. Fry prosciutto in vegetable oil to frizzle it. Combine penne with spinach, prosciutto, peppers, mozzarella and the dressing.
Good luck. It takes me two hours to make this, including clean-up time. The first time I made it, it took me a little longer
