View Full Version : Best ever Calzones (Pizza Pies)

Nothing beats homemade!

And nothing comes close to these. :thumbs:

Calzone / Spagetti Sauce .. Easier if made the day before and tastes better too. ;)

? cup oil
1 ? lbs. Ground beef
? lb Italian sausage
2 Cloves garlic
1 tsp. oregano
? tsp. rosemary
1 tsp. basil
2 tsp. salt
4 tbls. sugar
2 bay leaves
1 medium can whole tomatoes
8 eight oz. cans tomato sauce
3 six oz. cans tomato paste
4 tbls. Parmesan cheese

* If making for spagetti, add ? cup Celery, ? cup Green pepper, ? cup Onions

1. Heat oil, add meat and brown.
2. Add spices *Chop and add veg.
3. Mash whole tomatoes and add to meat mixture. Simmer for 10 minutes.
4. Add tomato sauce, paste, cheese and bay leaves.

Let simmer for at least two hours, longer if possible. Stir often.


Calzone / Pizza Dough

1 package dry yeast
1/4 cup warm water
3 tablespoons sugar
1 tablespoons salt
6 cups all purpose flour
1/4 cup olive oil

? Dissolve yeast into warm water and set aside.
? Mix sugar and salt into 2 cups water and set aside.
? Place flour into large mixing bowl. Add water mixture and olive oil. Stir with a wooden spoon a few minutes. Add dissolved yeast mixture. Stir 1 minute.
? Remove from bowl onto floured surface. Kneed until dough is smooth and elastic. Let rest 20 minutes.
? Divide into 2 Lg pizza, 4 med. pizza, or 12 calzone crusts* and let rest 20 min more.

Roll out to size. Add your sause and favorite fillings** Bake at 450 degrees for 20 min. or until golden brown. You can top with sause, cheese, or whatever you like.

* For calzones, brush entire calzone with olive oil before baking.

** Fillings: Pepperoni, Sausage, Canadian bacon, Garlic chicken, Mushrooms, Olives, Onions, Peppers, any cheeses, anything you like. :P

I know this looks like a lot of work, that's why I usually break it into 2 days. You can make the sause in a crock pot, just brown the meat and throw everything else in. You can even freeze the sause and wait until you feel up to doing the rest of it. It's great to have some sause in small containers so if you feel like spagetti one night, the sause is already done. I have made the crust by hand, and it can be a little bit of a workout. I got a mixer for Christmas and it is a breeze now.

I have tried freezing some finished ones which would make it an easy meal, but they don't taste the same. The crust goes flat. Anyone know a secret to that one?

I do hope you get to try these. I like them so much better than pizza! :wiggle:

The calzone recipe is delish! Thanks for the dinner idea. I make my dough in a bread machine, I think you might have better luck with freezing them if you don't let the dough rise before you freeze it. Make the calzones quick, and get them right in the freezer. You can put them on a baking sheet wrapped, then slide off for storage after being frozen. Then, let them defrost slowly and rise just before you want to bake them. Let them thaw on the baking sheet, (I sprinkle mine with corn meal instead of oil), and make sure the oven is preheated. I love baking, and I am really good at eating! Sue.

I'm so glad you enjoyed them. Thank you for the freezing tip. I will try that next time. I just have to figure out how to make them fast enough before the bread rises. :P

The bread machine is a good idea. I don't have one but my mixer works good for me.

Did you make the sause too and what did you put in yours? Just curious. :whisper:

Shelley - Chef for a day sounds great! I'll just need a plane ticket. :D

Boy, are my wrists and shoulders bad today! I love to whine :P I make sauce for pasta alot and throw in everything and anything I have on hand. I will make sauce from jars, scratch, or tomato paste, and add drained ground beef, or pepperoni, or pork. Since my husband likes meat more than veggies, I will hide zuccini, spinach or carrots (believe it or not) in the sauce. Cubes of mozzarella or cheddar cheese, whatever kind I happen to have, melt and help disguise them. I love to use rotelle diced tomatoes with green chiles, and add lots of diced peppers, green and bananna or jalepeno are favorites. Since I only have energy for a two or three day week, I cook in large quantities and use ziplock freezer bags. I will make my sauce thick, and spoon several portions into the bag for the freezer. When I drag in from work, by using the timer on my bread machine, I have an easy meal. I freeze homeade chili or soup alot, too. Bean is a favorite, and I will use canned pork and beans with canned beef broth as my stock. Dice up Spam ( :love: :love: ) or canned ham, brown in a frying pan, add brown sugar, carrots and canned kidney, black or pinto beans, and you have a simple high protein meal. I use my crock pot alot, too. I just learned a great easy way to make Alfredo sauce. Put cream cheese in a saucepan, and milk in small increments, and stirring constantly, melt to desired thickness. Add in a half cup of grated parmesan, throw over pasta and enjoy! Before I got into making bread from scratch, I bought alot of frozen bread dough. Believe me, anything I do doesn't really take much energy, cause I just ain't got it. I really changed my diet after being diagnosed. Since I was exhausted, I ate junk food. Now I plan ahead for better meals. Thanks for sharing, sue.

I just wanted to say that while I haven't made the calzones yet, I did make the sauce and loved it! ;)

I did it!! I made the calzones. This was about the only thing I did all weekend. :lol: They were monsters, but they tasted good. I had to recruit my boyfriend's help with the dough since my pain levels have recently increased and my energy has decreased.
