Pina Colada Pie (a zillion calories per serving) Just train your friends and family to say, "Sweetie, your butt is so small I can barely even SEE it in this light! ;)
1 pound of vanilla wafers
1 can sweetened condensed milk
14 ounce can crushed pineapple in juice, undrained
8 ounce tub of frozen whipped topping, thawed
1-1/2 cups flaked coconut
In a 13 x 9 inch pan, spread vanilla wafers to cover the bottom. Mix all other ingredients and pour half of mixture over the wavers. Spread remaining wafers on top and cover that with other half of mixture. Cover and refrigerate at least 4 hours. The pie filling thickens in the fridge. Overnight is better because the cookies have time to absorb moisture.
For a lower cal recipe, use sugar free dietetic cookies, low fat condensed milk, and low cal dietetic frozen whipped topping.
This is great for a large gathering as it fills the pan and can easily serve 12 people a hearty helping.
