a great winter warmer for cold Scottish evenings...
1 packet of red split lentils
1 packet of unsalted bacon
1 leek
1 onion
2 ham stock cubes
3 carrots
4 potatoes
Put a large pan on to boil filling it about 3/4 full add the stock cubes and lentils
wash peel and roughly chop your veg
roughly chop your bacon add to the pot with your veg
bring to boil and then simmer untill veg is over cooked, add seasoning salt and pepper
puree the whole lot and there you have it a lovely hearty low cal soup. Make it in the morning and it will be read to serve in the evening. no need to soak lentils.
