we are considering changing our dietry habits and are thinking of including loads of vegetarian reciepes in our diet would be gratefull for any suggestions anyone may have.

I am a vegatarian, I would add lots of leumes, beans, soy and whey protien to your diet. Also lots of whole grains contains more protien, rather than white bread or rice. I don't eat cheese, eggs or dairy often, so I make up my protien with the luemes etc. Fish a couple times a week would be a good idea and chicken. I would also start a vegatarian diet slowly, if your used to eating meat every night, it can be hard on your system, you will carve meat if you cut it out to quickly. Good luck and take care.

thanks for the advice about changing our diet slowly we probably will stick to be being demi vegetarians to start with and see how it goes and it will be easier when we visit family who would not fully understand us becoming vegetarians - we eat a few vegetarian meals anyway so it should be possible to change slowly.

Vida, I refuse to cook anything that takes me longer than 20 mins in the kitchen (though it is fine if it takes a while in the oven, I don't count that).
We eat mostly vegetarian as I can't bear cooking meat (see the problem muhahaha) - I do lots of stuff using tins of precooked beans eg soya beans, kidney beans, chick peas etc.
Anything that you usually make using mince (umm, I think Americans call that ground beef ?) well you can just chuck in a can of beans instead. So I make things like lasagne using beans, tacos, burritos, etc etc, the list is endless.
We also eat lots of vege bakes with potato, kumera, whatever is in the cupboard - if there's no protein in it well I just grate some cheese on the top and throw on some sesame seeds or whatever. I think we get too focused on protein anyway, we seem to get heaps without meat.
The other thing I do is use nuts in all sorts of things - I do a pasta bake thing (actually most of it comes out of a jar) and mix in pine nuts, yummy, also I use raw cashews, I saute them lightly and use them in fried rice. Nuts are great to throw into pasta and vege dishes. Just make sure they are raw, unsalted etc.
I am definitely not much of a cook (never been interested in it really) but we seem to get by minus much meat ! I do buy pastrami etc for sandwiches, if I don't have to cook it or look at it when it is raw then I can eat it .....
