I use maris piper potatoes for this 'recipe'
Peel as many as you want and chip them. I like mine quite chunky
Heat the oven . I use about 175c. Get a non stick roasting pan and drizzle some olive oil over the bottom. Use oil sparingly but make sure you have enough to coat the chips. Place the tin with oil in the oven to heat up.
Once the oil is heated, place the chips in the tin and turn or shake them tothem in the heated oil. Put into the oven for about 30-40 mins. Remember to keep an eye on them by shaking or turning them during cooking to get nice golden brown chips.
I call them my lazy chips because you don't have to stand over the cooker and you can put fish/meat and veg to roast at the same time. I use this method when I am not in the mood to cook.
