I am on a milk free diet, this cake keeps me going quite well!
enjoy, Caper x

1lb. mixed dried fruit
5 fluid oz. hot tea.
8oz SR Flour (wholemeal is good)
4oz sugar (or less)
2 eggs
mixed spice
2tbsp. whisky (optional)

Soak fruit overnight in the tea. Then mix in the sugar, spice and flour, add 2 eggs and beat together with whisky. (add a bit more tea if its very stiff).
Put into two 1lb loaf tins, lined for ease with those liners you just pop in the tin.

Bake for 1 1/2 hours till firm (cover with greaseproof half way through to prevent burning) GAS MARK 4

then when its cooled, if you can wait, have a sit down with a cup of tea and a nice slice of cake. style_emoticons/<#EMO_DIR#>/coffee.gif

This takes me back years. My aunt used to make it - it was called brack I think - and I saw Gary Rhodes making it the other day on TV, or something very similar. Or was he making fruity malt.
