Recipe for Summer Squash Relish

Chop 4 cups of any soft skin summer squash. Yellow Crookneck or zucchini. Or use some of each.
Add one Tablespoon finely chipped sweet onion.
Peel and remove seeds from enough fresh tomatoes to make 2 cups chopped.
Split and remove inner ribs and seeds from 2 fresh Jalapeno peppers: more if like spicy. Or use canned tomatoes with peppers added.
Add salt to taste. Put in microwaveable dish and cover with plastic wrap. Punch several holes in plastic.
Nuke for 3 minutes. Remove and stir. Recover. Nuke for another 2 0r 3 minutes. Should not be cooked until real soft. Needs a bit of crunch. Good as relish if chopped real fine or as a vegetable side dish if rough chopped.
