View Full Version : Does anyone have a good recipe for cheese straws?

I am looking for a good recipe for cheese straws. I know that it is made with cheddar cheese, but dont know much more than that. I cant seem to find a recipe online or in any of my cookbooks.

Hi Liz,
I always thought the following was a pretty good recipe for Cheese Straws:
1 cp alpurpose flour, sifted
1/2 tsp salt
1/4 tsp dry mustard
1/8 tsp ceyenne pepper
1/3 cp butter or margarine
1 cp grated sharpe cheddar cheese
1 1/2 Tbsp ice water
1 tsp celery seed ( may use sesame or poppy or omit)
Sift togeter dry ingredients. Cut in butter and half of cheese until resembles coarse crumbs. Add cold water; stir lightly to blend. Shape into a ball.
Preheat oven 350 degrees
On lightly floured surface roll out pastry 1/8 " thick. Sprinkle with remaining cheese. Fold dough in half and roll out to 1/8" thick again.
With knife or pizza cutter, cut into 3" strips long and about 1/2" wide. Sprinkle with celery seeds or other seeds.
Place on ungreasd cookie sheets. Bake about 12 min. or until pale brown. (Serve warm)
Maybe frozen and reheated at 300 degrees before serving

I am undereducated about cheese straws. I have no clue what they are but they do sound good.
