View Full Version : Need lunch ideas for work
I'm planning to go back to work in September after a period of absence and would like to plan healthy, nutritious lunches that are low in fat and salt. They must also be convenient and require little or no additional preparation (I won't always have access to a kitchen with a microwave, etc.). Does anyone have any ideas?

Hi there.
Here a few ideas for lunch that I have done.
I bring a salad and dump a can of tuna in, or I make a thin and trim turkey sandwich on light white bread with fat free cheese, or a fruit salad. Always add the apple or fruit in there. With a microwave you can basically make a small healthy meal in small portions. Like a piece of chicken and vegies.

I lunch much the way Paula does. I bring a lean meat sandwich with cheese, lettuce and tomato on white-wheat bread. I also have some fruit or carrots and yogurt. I'm not much of a salad fan. When I get in a rut, I bring leftovers or something to pop into the microwave.
One tip...if you bring tomato for a sandwich, keep it in a separate container until lunch. Otherwise, your sandwich will get soggy.

Thanks guys, for the yummy suggestions. Just wondering, though, what kinds of meats are you using? I used to use mainly low-fat deli meats, but since my kidney status has declined, I've had to watch my salts more. Unfortunately deli meats in general are very high in sodium so I need to look for a convenient alternative.

I make up a lunch box and keep it in the fridge so that I can have enough for two or more days. This is what I put in it:
Cous cous (very simply prepared - just boiling water and leave for a few minutes). Some shops also do a flavoured variety and this is yummy!
Leave the cous cous to cool and then add in the following:
Chopped Spring Onions
Black seedless grapes
Pumpkin Seeds
Sunflower Seeds
Slices of Tomato
Various peppers
Cucumber
Chunks of Feta Cheese
and basically any nuts or seeds I have lying around....!
A little small drizzle of olive oil brings it all together and helps you to be able to eat it off a fork!
Its the kind of salad you can add anything you want to...including olives if you like them (I dont!) and various nuts.
It takes about 20 minutes all told to prepare and I have lunch for two or three days in the fridge.... Its worth it!
For added flavour I sometimes dry roast the seeds or nuts. I dry roast them when I buy them first and just take a handful out everytime to add to the salad. They stay grand and fresh in an air tight container.
Its a yummy salad! I promise:) ...my workmates are always robbing bits of it!

we keep cut up carrots, celery,cucumber,cheese, grapes and other fruit and veggies in the fridge, on the weekends we cook a roast of beef/ham or chicken and cut it up and put into small baggies, have whole grain wraps/bread/buns in the house, in the morning you just take out what you want for that day and put it together at work, or here at home. you can make salad with all the things or make a wrap, or eat them by themselves.by cooking your own meat you get less salt then the deli meat
also you can buy small fruit cup if you dont' want to keep fruit in the house,(goes bad to fast) there are many types of granola bars available.if the salt is to high make your own, lot of recipes on the web. if you are unable to cook much (lupus) have kids help you or other adults. most of these things can be made up at your desk or even on the road for people that travel, for the summer cold pasta dishes . in the winter a themos of hot left overs or soup. have fun creating things different

Something I tyr to do is cook one or two large meats a week in a crock pot. Then ouy have a nice meal for when ouy get home from work and it makes great sandwihches during the week and ouy can control the amount of sodium ouy use during cooking.

Healthy Choice lunch meats seem to have less sodium in them as well if you are looking for pre-packaged things. I use the pre-packaged vacuum sealed flavored tuna as well...they come in yummy flavors like sweet and sour, hickory, lemon pepper and herb & garlic...throw it in a box with a ice pack and some carrots and a fruit cup or two and you are good to go!!
