Beef Lentil Soup
7 cups water
2 cups lentils
1 pound stew beef
1 pound bag baby carrots cut into small rounds
1/2 sweet onion finely chopped
2 tablespoons minced garlic (sold in convenient jars)
2 tablespoons Worchestershire Sauce
3 tablespoons granular beef bouillon
1/4 teaspoon pepper
Rinse lentils in colander
Cut stew beef into small (about 1 inch) pieces
Sear beef while bringing lentils to boil in 7 cups water
Add beef, onion, garlic, Worchestershire Sauce, bouillon and pepper to boiling lentils.
Reduce heat and simmer uncovered for about 1/2 hour or until lentils are tender
Add carrots, cover and simmer until they are tender
Serve with homemade cornbread.
Serves about 12.
