Spicy Lentils & Potatoes
1-tablespoon vegetable oil
1 onion, chopped
2 cloves garlic, minced
3 medium carrots, sliced into 1 inch rounds
1 cup brown or green lentils rinsed and drained
1 teaspoon each of ground coriander and cumin
3 cups of stock (beef or chicken)
1½ lbs potatoes 1-inch cubes (4 medium)
1-teaspoon salt
Fresh ground pepper to taste
Heat oil in large saucepan over medium heat. Add onion, garlic and carrots. Cook, stirring about 5 minutes or until onions are softened. Stir in lentils, cumin and coriander. Cook, stirring 1 minute. Pour in stock. Bring to boil. Reduce to simmer, cover 15 minutes. Add potatoes, salt and pepper. Cover and cook 20 minutes or till potatoes cooked.
Makes 6 servings.
