View Full Version : Black-eye pea soup

I just finished cooking this recipe and it is absolutely delicious.

1/2 pound bacon, diced
2 1/2 cups dry black-eyed peas
1 onion chopped
1/2 teaspoon salt
3 quarts water
1/2 teaspoon pepper
4 cubes chicken bouillon
6 small potatoes, diced

Brown the bacon in a large pot over medium heat. Drain grease, and place onion in the pot. Cook and stir until tender. Pour in the water. Mix in the bouillon cubes until dissolved. Stir in black-eyed peas, and season with salt and pepper. Bring to a boil, reduce heat to low, and simmer 45 minutes.

Place the potatoes in the pot, and continue cooking 15 minutes, or until beans and potatoes are tender. Serve warm.

Cook's note: I substitued low-sodium chicken broth for the water and bouillon. Added 1 piece of garlic and considerably more salt-free seasoning than the recipe called for. Bon Apetit'

I wonder if you could substitute liquid smoke for the bacon?:sad:

I've copied this recipe to cook tonight. Looks like a really good one.

I live in Illinois now, but when I lived in Georgia (for 18 years), I learned to LOVE black eyed peas with collards and corn bread and eat every New Year's for good luck (and good taste, too!)

I cooked this soup and we had it today for New Year's. The only change I made was to use ham instead of bacon, since I had some left over from Christmas. It was really good. Thanks again.
