I often run out of eggs or milk or butter and occasionally simultaneously! :hehe:

So I did a search when I had to have cookies for the next days coffee morning and I found a vegan site. I am not vegan but this gal has great tips for baking without eggs or milk or butter! I hope you enjoy the link.

Thank you milly!

I'm allergic to eggs, can only tolerate a very small amount so its interesting to read of things I can substitute.

Thanks for posting!

I am not vegan either but i used a vegan shortening stick tonight to make cookies. The cookie mix was fabulous! It is gluten free, wheat free, and dairy free. It called for adding two eggs and butter. So i substituted the shortening which was also free of hydrogenated oils, gluten, dairy, etc.

The cookies were fabulous! I can't tell the difference. The mix was expensive but worth it for a treat :)

Lily, the egg allergy can complicate things. So glad there are alternatives for you!

Just on the note of the prunes. my dearest friend is Italian and her family has run a bakery and deli for so long I can't remember how long they make this prune cake and nobody ever bought it, ugh prunes right? well then they came out with plum cake and everybody loved it! sold like there was no tomorrow well lo and behold the prune cake was the plum cake! (ya saw that coming didn't you?) truly i am a non-prune eating gal and ordinarliy you would not get me to eat a prune but mixed into something I would wager large quantities of money that you would not know the difference:)
"give prunes a chance" to the tune of "give peace a chance"
