I am really into 'soup' recipes at the moment as they help with the weight control - a favourite is:
Apple and Broccoli
2 Dessert apples
1 head of Broccoli
2 Vegetable stock cubes
1 onion
Method
Lightly fry chopped onion and 2 Dessert Apples (in oil or butter)
Add 1 and three quarters pints of liquid with vegetable stock cubes
Add Broccoli which has been chopped and any course stalks discarded
Simmer 20 minutes.
Liquidise.
Before serving you may add a little cream or creme fraiche.
