This is what I do with leftover meat and Veggies. You can add what you like to make it your own.

leftover beef or chicken
in its broth , you can use 4 cans broth or 4 to 5 bullion cubes with about 2 quarts water With beef I like to use a can of Tomatoe Juice and a couple cups of water .
2 med size onions
1 stalk celery chopped up
grated carrots
1 cup rice or you can use noodles (if you like)
leftover vegetables of any kind ( you can use mixed Vegetables)
2 cups cooked tomatoes (we like the stewed ones with chilis)
Add you own spice to your taste .Parsley,red peppers ect....

Our Vegatable soup is made mostly from leftovers. We always have onions,carrots , celery,rice and cooked tomatoes on hand and then anything else we've had during the week goes in .Usually, we add corn ,limas,green beans , peas: but don't go out and buy something for your soup .The more you can use of what you have as leftovers the better the soup. Salt and peper to taste.Most of the time your meat and vegetables are already seasoned so becareful that you don't add too much. Let cook for 2 hours Enjoy with your favorite bread!!!!
This is a healthy soup with very little work and clean out leftovers.

A lot of times, this is what I do, with chicken or pork or steack, leftovers.

Takd the meat and chop up into small pieces. Cook rice on the stovetop and take a frozen bag of mixed vegies, whatever you like or have, and add it all together and put in the over for about 30 minutes. You can add a can of cream of chicken or mushroom soup to it. It really is good, the kids love it like it is this great homemade dish and it is so easy!
