4 large Baking Potatoes
2 tablespoons butter or margarine
1 small onion
1 (10oz) frozen chopped broccoli thawed and drained
1/2 cup ranch salad dressing
1 tablespoon oil
2 teaspoon dried parsley (optional)\salt and papper
Preheat oven to 425 F. pierce potatoes with a fork and microwave on high for 12 minutes:then bake in oven for 15 minutes. Slice off potato tops (to make a boat) .Scoop out pulp keeping skins intact.Mash pulp in a medium bowl .Saute onions in butter untill tender over medium heat about 5min Add onions ,broccoli and salad dressing to potato pulp and mix well.
Brush out side of potato skins shells with oil.( it makes the skins crisp and brown) Then add pulp to the shells Bake potatos untill heated through about 15 min Sprinkle with parsley,salt and pepper to taste .
Variation:
1) Add 1 cup of cheese to the potato pulp mixture or top with cheese before baking.
2) Dice any leftover beef,chicken and add to the pulp mixture.
3) add deli sliced beef and gravy on top after you bake
This is a good lunch meal or you can fix a salad ,bread and it is dinner.
You can precook this then cool to room temp. Wrap and refrigerate for up to 3 days .Then just reheat in Microwave for 5 minutes.
