Watermelon Salad sounds delicious.
Thought I'd suggest this easy 1,1,1,1 Cake, that can be used if Gluten Free flour if needed.
Serves 6-8
1 cup coconut
1 cup milk
1 cup caster sugar
1 1/2 cups GF self-raising flour

Preheat oven to 180C. Place all
ingredients into a bowl and mix.
Pour mixture into a medium-size loaf tin lined
with baking paper. bake for 45 min.

Excuse my ignorance but how much is 180 degrees in Fahrenheit????:blush::blush::blush::blush::blush:

Guess I should have paid more attention to the metric system in school huh.:lol::lol::lol::lol::lol:

Hi Karol

180 celsius is 356 Fahrenheit which is about Gas Mark 4.

1,1,1,1 Cake.

Thanks so much, Joan, for helping with cake heat. Just to say tests showed no coeliac problem thank goodness. I was intrigued with a cake with no egg, so tried it with S.R flour. To my surprise it rose well. A lemon frosting could be added, but I found the whole cake was yummy, very tasty. Enjoy!
