This is a really easy recipe especially if you have people for dinner but don't have the energy to spend alot of time in the kitchen. I made this on Saturday and hubby loved it!
Ingredients:
1 tblsp oil
750g diced lamb
500ml chicken stock
2 small onions, chopped
1/2 cup pitted prunes, halved
1/2 cup dried apricots, halved
1 tsp ground ginger
1 tsp ground cinnamon
Black pepper to taste
Here's how
1 Heat the oil in a large saucepan. Add the meat in small batches, and cook over medium heat for 2 minutes, or until well browned. Return all the meat to the pan.
2 Add the stock, onion, prunes, apricots, ginger and cinnamon to the saucepan and season with pepper. Bring to the boil, then reduce the heat and simmer, covered, for one hour, or until the meat is tender. Garnish with toasted slivered almonds, if desired, and serve with rice or couscous.
