I like soup so hope you do too.
you will need (sorry not very good on amounts, I'm a splodge of this a pinch of that person)
1 small orange pumkin (cut into chunks seed removed)
1 onion (chopped)
1 clove garlic peled and chopped.
1 potato peeled chopped
1 carrot peeled and chopped.
vegetable stock ( I use instant)
1i tin coconut milk.
teaspoon red thai curry paste.
in a large sauce pan, fry onion and garlic....then add diced pumkin (with skin)....stir a while untill a bit soft....then add stock it should cover the pumkin quite well...then add potato and carrot. Let this all cook untill all is really soft...either take off the flame and let cool and puree...or..... use a mash potato masher so its really thick and has texture,
If you want to add pepper and salt...but stock is usually enough...anyway then add the coconut milk and the curry paste....if your not use to thai curry try a half teaspoon first you can always add more if u want too.
