Refrigerator Rolls

2 cups lukewarm water
2 packs of yeast
2 tsp. salt
1/2 cup sugar
1/4 cup butter
1 egg beaten
7 to 71/2 cups flour

Put water in large bowl, add yeast & stir until dissolved.
Add sugar & salt.
Sift 3 cups of flour into mixture & beat until well blended.
Add beaten egg & softened shortening.
Beat until smooth. Add rest of flour a little at a time.
Knead lightly. Let rise covered with a damp cloth until doubled in bulk.
Punch down & form into rolls. (can be place in refrigerator or freezer) or let rise until double in bulk and bake at 375 degrees. 10 - 12 minutes.

*Here are some hints I do. I use rapid rise yeast. I warm the oven to 200 degrees and shut it off and place the dough in the oven. It makes for a nice warm place for the dough to rise. I also split the dough into two different glass bowls.*
