I add them to salads, or just munch on their own. They are best eaten fresh rather than cooked, more nutrition. You could make an oil dressing that is spicy by adding a bit of chillie and lime juice.
They are lovely in stir frys - throw them in for the last minute just to warm through.
I would add them whenever beansprouts are called for if you didn't have any bean sprouts. Not the same but do at a pinch. I used them last week in a thai veg curry because I had no mung bean sprouts, it sort of worked. Mung beans make lovely sprouts and so do whole green lentils.
